Guacamole with White Anchovies

1 Avocado
1 Tomato
1 Spring Onion
1 Lemon
Salt and Pepper
White Anchovies


Finely dice the tomato and onion. Open the avocado, empty it with a spoon and crush the flesh with a fork. Mix the avocado with the onion and tomato, add the lemon juice and season to taste. Place the guacamole into a round mould. Tidy up the anchovies and place them on top of the guacamole. The touch of acid will complement it very well.
