Sweet Potato Mousse Truffled with White Anchovies

1 Boniato
1 Cl. Truffle Oil
1 Dl. Liquid Cream
White Vinegar


Peel, cut and boil the sweet potato. Once boiled, add the cream and the truffle oil. Mix well and grind until thick. Once the mousse is done, season it.

Finally the boniato mousse is covered and the anchovy is added in vinegar.
